It always intrigued me how to choose a tapioca?

I love bingka ubi kayu and wanted to make them. But when it comes to choosing tapioca and which part of it can be eaten....I dropped the whole idea of making the bingka.

Hi Jc,
You know what, I just try my luck on tapioca. I just look at the outside texture, if its look young and not looking like a hard branch of tree then I goes on cooking it. Bingka ubi? just try it Jc who knows your luck ;)..
